In this study, the influence of supercritical fluid extraction parameters on the lycopene yield was investigated. The results showed that: the extraction yield and lycopene content increased as the pressure, temperature, CO2 flow rate increased and particle size decreased in the investigated ranges. The optimized parameters were: 80°C, 400 bar, 40 g/minute of CO2, particle size was less than 800 um and the extraction time of 180 minutes.
